Born in Northampton , England, on 2 April , Ellis studied at Northampton School of Art from to , before completing his national service with the photographic unit of RAF Bomber Command between and He was awarded a scholarship to attend the Royal College of Art from to graduating with a diploma. They arrived on the "Dominion Monarch".

Ellis filed for divorce in , which was granted in The couple have twin daughters, Hana and Ngarino. They lived in Auckland, in the house Robert helped build in — Ellis lectured at the Yeovil School of Art in Somerset from to In he was awarded a personal chair in , and retired as a Professor Emeritus in Ellis has been described as one of "New Zealand's pre-eminent artists" and he has held more than 60 solo exhibitions in New Zealand and around the world.
His landscape paintings address themes of urbanisation, subdivision and colonisation. His work was the focus of a major book published by Ron Sang in , entitled Robert Ellis [see review below].
